I promised that if they were tasty, then I would post the recipe. They were tasty, so here it is (from EAT Magazine):
Honey Chicken Sandwiches
Ingredients:
3 tablespoons honey
2 teaspoons snipped fresh thyme or 1/2 teaspoon dried thyme, crushed (I used about 1/4 teaspoon)
1 small red onion, halved and thinly sliced (I didn't use as much as it called for)
12 ounces cut-up cooked chicken
4 baked biscuits, split
Directions:
1. In a medium skillet, combine honey and thyme; stir in red onion. Cook and stir over medium-low heat just until hot (do not boil). Stir in chicken; heat through. Arrange chicken mixture on biscuit bottoms. Add tops. Makes 4 servings. (*We actually made a tube of big biscuits, and had *plenty* of chicken for about 7 sandwiches)

Sounds yummy. Do your kids pick out the onions?
No, they don't pick out the onions. But, they also didn't eat with us. LOL ;) Eric and I typically eat much later than the kids because I work a few hours a week doing therapy -- typically right after he gets home (a few evenings a week) -- so on those nights, the kids eat something different and eat earlier than us.
These look yummy! I'll have to try this recipe soon.
My 2-year-old daughter picks the onions out of everything and won't eat anything else until I get them off her plate.
